Avocados Stuffed with Chicken Salad

Andrea Greer's avocado's stuffed with chicken salad


1 ounce Chicken, Breast, Grilled, 4 oz

1 tsp Onions, Green, Scallion, Bunch, Fresh, Diced

1 tsp Cilantro, Fresh, Chopped

1/2 ounce Tomatoes, Fresh, Diced

1/2 tsp Mayonnaise, Light

1/8 tsp Peppers, Chipotle in Adobo Sauce, Canned, Minced

1/2 each Avocado, Fresh

1/8 tsp Salt, Kosher

1/8 tsp Lime, Fresh, Juice, Strained


Dice grilled chicken breast and mix with scallions, cilantro and tomatoes. In a separate bowl, mix together mayonnaise and chipotle chilies. Toss chipotle mayonnaise with the chicken salad ingredients until well combined.

Cut avocados in half and remove the pit. Into each avocado half, place 1/4 cup of filling and sprinkle salt and lime juice over top.

Portion Size: 1/2 avocado with 1/4 cup chicken salad.

Keep cold for cold service.
