Irish Bomb Cake

      Chocolate Guinness Cake

      3 c. all purpose flour, sifted

      1 cup + 2 T. cocoa powder, sifted

      3 cup granulated sugar

      1 1/2 tsp. salt

      1 1/2 tsp. baking powder

      1 T. baking soda

      Mix together

      Add Slowly

      1 1/2 c. canola oil

      1 (11oz.) bottle guinness beer

      1 1/2 c. milk

      Mix on med. speed for 2 min.


      3 large eggs

      1 1/2 tsp. vanilla extract

      Mix on med. speed for 2 min.

      Distribute evenly into 2 9" round greased and parchment paper lined cake pans

      Bake at 350 for 40-45 min. or until a toothpick inserted comes out clean.

      Cool Completely and cut off tops and each layer in half.

      Irish Cream Buttercream

      3 sticks softened butter

      2/3 cup shortening

      Beat at med. speed for 3 min.


      6 T. Irish Cream

      2 t. vanilla extract

      Slowly add:

      1 2# bag of powdered sugar

      Beat again at med. speed for 2-3 minutes

      Pipe buttercream on each layer and sprinkle with chocolate chips

      Frost cake with remaining buttercream

      Dark Chocolate Ganache

      Bring 3/4 cup heavy cream

      3/4 oz. corn syrup

      1 1/2 T butter to a simmer

      Pour over:

      8 oz. (45%) chopped dark chocolate

      Whisk until smooth

      Pour over cooled frosted cake
