KCBS Sanctioned BBQ Event
Truman football will be hosting its inaugural Kansas City Barbeque Society (KCBS) sanctioned BBQ competition before its season-opening game against Lincoln University on September 8, 2012.
Bulldog BBQ & Blues:
The Smoke at Stokes is a state championship BBQ event which includes an officially-sanctioned barbeque competition, live blues music,
People's Choice tasting, and a tailgate party to celebrate the home opener.
The event will take place on the Truman State University campus near Stokes Stadium.
Waiver of Liability
In consideration in your accepting this entry, I the undersigned, intending to be legally bound, hereby for myself, my heirs, executors and administrators, waive and release any and all rights and claims for damages I may have against the promoters and sponsors of the Bulldog BBQ & Blues: The Smoke at Stokes, Truman State University, KCBS, and the Bulldog BBQ & Blues: The Smoke at Stokes committee, their agents, successors and assigns for any and all injuries suffered by me in this event. Further, I hereby grant full permission to Truman State University, the Bulldog BBQ & Blues: The Smoke at Stokes committee and/or agents authorized by them, to use any photographs, video tapes, motion pictures, recordings or any other record of this event for any legitimate purpose.
All Entries: I understand that if I cancel within 30 days before the event, I will be charged a $50 cancellation fee. I agree to abide by all rules, regulations and decisions of Truman State University/Bulldog BBQ & Blues: The Smoke at Stokes (and KCBS rules). Set-up time: Friday, September 7th between 10amâ??6pm. Meat check-in will begin at11am (only unseasoned meat and whole pork butts are allowed at this time). All cars that do not fit into your space must be out of the event area by 7pm. Approximate time of arrival: ____________
Awards will be announced from 2 â?? 2:30 pm Saturday, with photos of the winners immediately following.
Contestants will be asked to vacate the area following the award ceremony for â??Wetâ?? tailgate. Live music will take place Saturday. Quiet time begins at 11pm Friday.

As a courtesy to other BBQ participants, we ask you to keep your connections to a minimum. You will need to supply your own heavy-duty extension cord (preferably a 100ft. cord with 12 gauge wire) to pull power directly to your booth. If you are using a power strip, you may be asked to limit the amount of items you run off one circuit. Contestants will be allowed to bring in their own generators.

All teams will have the opportunity to cook for the public sampling on Saturday. If the team chooses to participate, 1-2 pork butts will be provided to them. Meat turn-in for the Peopleâ??s Choice will be at 1pm with sampling to take place from 4-6pm during the tailgate. Winner will be announced through emails and prize of $100 will be mailed to contestant on Monday, September 10th.

Immediately following the award ceremony we ask all contestants to begin to exit the parking lot. We ask this because starting at 4pm there will be a â??Wetâ?? tailgate held in the same parking lot for supporters of Bulldog Football. Tailgate will last up until kickoff when the Truman State Bulldogs take on the Lincoln Tigers at 7pm. Contestants are encouraged to come back for the tailgate and enjoy the unique college football atmosphere.

HOLD HARMLESS AGREEMENT
The contractor, vendor, individual and/or organization below will indemnify and hold harmless Truman State University, the City of Kirksville, their agents, employees and officials from and against all claims, damages, losses and expenses including attorneyâ??s fees arising out of or resulting from the performance of the work and/or activity, provided that any such claims, damage, loss or expense is attributable to alcohol, bodily injury, sickness, disease or death, or to cause injury to or destruction of tangible property, including the loss of use resulting therefrom, and is caused in whole or in part by any negligent or willful act or omission of the contractor, and subcontractor, anyone directly or indirectly employed by any of them, an individual or organization, or anyone for whose acts any of them may be liable.
In any and all claims against Truman State University, the City of Kirksville, or any of its agents or employees, by an employee of the contractor, any subcontractor, anyone directly or indirectly employed by any of them, an individual or organization, or anyone for whose acts any of them may be liable, the indemnification obligation shall not be limited in any way by any limitation on the amount or type of damages, compensation or benefits payable by or for the contractor or any subcontractor under workmenâ??s compensation acts, disability benefits acts or other employee benefit acts.
The obligation of the contractor, individual and/or organization under this paragraph shall not extend to the liability of the engineer, his agents or employees arising out of the preparation or approval of maps, drawings, opinions, reports, surveys, change orders, designs or specifications.

2012 Rules and Regulations
I. Fire Regulations
a. All burn barrels must have a solid bottom and a screen covering and must be 18 inches off the ground.
b. Ash cans, grease containers and containers for gray water will be provided at designated locations in the festival area. No trash in these receptacles is allowed.
c. The City of Kirksville Fire Department requires that all teams have a minimum of one pressurized fire extinguisher with a 2A:10BC rating at each booth. This must be a working extinguisher that is of appropriate size to the size of your rig/pit.
d. All tents and awnings used must be flame retardant.
e. Truman State University, the City of Kirksville, and the event committee are not responsible for any fires that may occur.
II. Team Conduct and Public Safety
a. Team contact and head cooks will be held responsible for the conduct of their team and guests. All are expected to cooperate with event staff and volunteers.
b. No teams may sell any items without specific approval by the event committee.
c. Quiet time begins at 11pm Friday night, no exceptions. Any team found in violation of quiet time rules have the possibility of being disqualified and will not be invited back next year.
d. Each team must be considerate to neighbors (i.e. no loud music, no obscene music, etc.). Legitimate complaints will be considered a violation of the rules.
III. Event Regulations and Requirements
a. No team fundraising activities of any kind are allowed in the festival zone.
b. Truman State University & the Bulldog BBQ & Blues committee reserve the right to make any additional regulations as the situation warrants. ALL decisions made by either group are final.
c. The event is rain or shine and no refunds will be given for bad weather. Be prepared for the possibility of standing water.
d. Not all spots will be perfectly level, so please plan accordingly.
e. Overnight security will be provided. Truman State University and its subsidiaries will not be held responsible for any theft, act of violence, or vandalism that takes place.
f. Along with Truman State Universityâ??s rules and regulations, Bulldog BBQ & Blues: The Smoke at Stokes will be sanctioned by Kansas City BBQ Society and all KCBS current rules and regulations will also apply.
IV. Contestant Responsibilities
a. You will be responsible for supplying your own competition meat. We will not have a supplier on site. You are also responsible for your own ingredients, cooking devices, utensils, tables, extension cords, etc.
b. Limited ice will be available.
c. Contestants are responsible for keeping their area clean at all times. A dumpster and trash cans will be placed throughout the festival area.
d. Contestants are responsible for strict adherence to all rules and regulations of the Kirksville Police Department, Kirksville Fire Department, the State of Missouri Health Department, and any other governing authorities.
e. Bulldog BBQ & Blues does not provide parking for team vehicles or motor homes. Depending on space available, it is likely that no motorized vehicles may be parked in your team area during the event, unless the vehicle is an integral part of your cooker.

g. Event staff and volunteers will not aid in physically moving equipment or supplies. Please remember to bring your handcarts.
V. Food Safety
a. Meat must be maintained at a temperature below 40 degrees Fahrenheit prior to cooking, and at or above 140 degrees during and after cooking.
b. All teams are required to have a bucket of chlorinated water for sterilization in the cooking area. Each team is required to bring bleach for this.
c. Cleanliness of the cook, assistants, and contestants area is required. Hands must be kept clean when coming into contact with the meat.
VI. Official Scoring Criteria
a. The four KCBS meat categories are chicken, pork ribs, pork butt, and beef brisket. All competition meats will be inspected by the Official Meat Inspector/s during check-in. Once it has been inspected it must not leave the festival zone.
b. All competition meat must be raw at inspection. No pre-seasoned meat is allowed other than manufacturer-enhanced or -injected products, as shown on label (excluding but not limited to: teriyaki, lemon pepper or butter injected).
c. Entries will be judged based on a blind-judging method. Your team name or any other identifiable marks must not be anywhere on your judging containers.
d. Contest Criteria:
i. Appearance of entry â?? Does it look good? Is it at the proper level of finish? The entry should be appealing to the blind eye.
ii. Tenderness of entry, which is a measure of the texture. The entry should have texture, but be moist and easy to chew without being mushy or dry. Should pull easily from the bone, but retain body with moisture.
iii. Flavor of entry â?? Does the flavor appeal to the palate? Pleasing overall taste?
